Taco Sundaes are a fun, customizable layered dish combining seasoned beef, beans, rice, and fresh toppings, perfect for casual gatherings and satisfying Mexican-inspired flavors.

Ingredients

  • 1 lb. ground beef
  • 1 (1 1/4 oz.) pkg. taco seasoning
  • 1/2 c. water
  • 4 c. cooked kidney or pinto beans
  • 1 c. raw brown rice, steamed
  • 1 can corn, heated and drained
  • 1 head lettuce, shredded
  • 4 to 6 tomatoes, chopped
  • 1 (2 1/4 oz.) can black olives, drained
  • 1 c. grated cheese
  • 1 c. salsa
  • tortilla chips

Instructions

  1. Brown the ground beef and drain excess fat.
  2. Add taco seasoning, water, and beans to the beef. Cook for 15 minutes.
  3. Let guests build their own sundae in the following order: steamed rice, meat-bean mixture, heated and drained corn, shredded lettuce, chopped tomatoes, drained black olives, grated cheese, and salsa.
  4. Serve with tortilla chips.
