Ingredients

  • shortening
  • 1 egg
  • 1 (12 oz.) can kernel corn
  • 1 (4 oz.) pkg. shredded Cheddar cheese
  • 1 (7 or 8 1/2 oz.) pkg. corn muffin mix
  • 1 (5 1/2 oz.) pkg. small smoked sausage links

Instructions

  1. Heat oven to 400°F (200°C).
  2. Grease sides and bottom of a baking dish.
  3. Crack the egg into a mixing bowl and beat.
  4. Add undrained corn and half of the shredded Cheddar cheese to the egg.
  5. Mix well with a wooden spoon.
  6. Stir in the corn muffin mix until ingredients are wet; the batter will be thick.
  7. Spoon the batter into the prepared baking dish.
  8. Open the small smoked sausage links and pat dry.
  9. Arrange the sausage links on top of the batter.
  10. Bake for about 30 minutes until the top is golden brown.
  11. Sprinkle the remaining cheese over the top before serving.
