Ingredients

  • 4 potatoes, diced
  • 2 carrots, sliced
  • 1 stalk celery, diced
  • 1 onion, chopped
  • 1/2 cup Bisquick
  • 1/2 cup flour
  • 2 tablespoons parsley
  • 1/4 stick butter or margarine
  • 2 eggs
  • 1 1/2 cups cold mashed potatoes
  • Leftover turkey
  • Leftover gravy

Instructions

  1. Grease a 2-quart baking dish generously with butter.
  2. Cook potatoes, carrots, celery, and onion together until tender.
  3. Mix Bisquick, flour, parsley, and margarine until combined.
  4. Beat eggs, season with salt and pepper, and mix with leftover mashed potatoes.
  5. Add the egg mixture to the Bisquick mixture and work until sticky.
  6. Spoon the mixture into the prepared dish and pat it into the bottom and sides, saving some for the top.
  7. Place leftover turkey, gravy, and peas in the dish, then add potatoes, carrots, celery, and onion.
  8. Put more turkey and gravy in the center of the dish.
  9. Spoon the remaining Bisquick mixture around the sides, sealing well and leaving the center open.
  10. Bake at 375° to 400°F for about 1 hour until golden and bubbly.
