- Grease a 2-quart baking dish generously with butter.
- Cook potatoes, carrots, celery, and onion together until tender.
- Mix Bisquick, flour, parsley, and margarine until combined.
- Beat eggs, season with salt and pepper, and mix with leftover mashed potatoes.
- Add the egg mixture to the Bisquick mixture and work until sticky.
- Spoon the mixture into the prepared dish and pat it into the bottom and sides, saving some for the top.
- Place leftover turkey, gravy, and peas in the dish, then add potatoes, carrots, celery, and onion.
- Put more turkey and gravy in the center of the dish.
- Spoon the remaining Bisquick mixture around the sides, sealing well and leaving the center open.
- Bake at 375° to 400°F for about 1 hour until golden and bubbly.
