A savory leek and celery dressing with aromatic sage and poultry seasoning, perfect for stuffing poultry or as a flavorful side for festive meals.

Ingredients

  • 2 cups diced celery
  • 2 cups diced leeks
  • 1 medium onion, minced
  • 3/4 cup margarine
  • 4 quarts lightly packed day-old bread cubes
  • 4 or 5 slices regular bread
  • 7 or 8 teaspoons poultry seasoning or crushed sage
  • 1 teaspoon pepper

Instructions

  1. Simmer the diced celery and leeks in boiling water for 15 minutes or until tender.
  2. Drain, reserving 2 cups of the cooking liquid.
  3. Cook the minced onion in the margarine over low heat until tender, but not browned.
  4. Mix the bread cubes and seasonings together in a large bowl.
  5. Add the drained celery and leeks to the bread mixture.
  6. Pour in the reserved cooking liquid as needed to make the mixture moist.
  7. Combine all ingredients with a fork until well mixed.
  8. Stuff the mixture into a 10 to 12-pound bird or use as desired.
