Ingredients

  • 1 (16 oz.) can yellow hominy
  • 1 (4 oz.) can chopped olives
  • 1 (4 oz.) can mild green chilies
  • 2 (16 oz.) cans tamales
  • 2 c. shredded mild Cheddar cheese
  • 1/4 c. dried chopped onions

Instructions

  1. Preheat oven to 350°.
  2. Peel wrappers off tamales and chop in a large bowl.
  3. Drain hominy, olives, and green chilies.
  4. Add them to the chopped tamales.
  5. Mix well.
  6. Place the mixture in a 9 x 13 x 3-inch baking dish.
  7. Spread out evenly.
  8. Sprinkle cheese over the top and olives if desired.
  9. Bake for 20 to 30 minutes.
  10. Serve with Spanish rice and corn chips.
