Tamale Stuffed Peppers

Sweet bell peppers stuffed with seasoned ground beef, onions, tomatoes, and cornmeal, baked until tender and flavorful—perfect for a hearty, colorful family meal.

Ingredients

  • 3 green peppers
  • 1 large onion
  • 1 clove garlic
  • 1 lb. lean hamburger meat
  • 1/2 tsp. salt
  • 3 Tbsp. chili powder
  • 1 No. 2 can minced tomatoes
  • 1 cup cornmeal

Instructions

  1. Cut the green peppers lengthwise and wash them.
  2. Boil the peppers in water until tender; set aside.
  3. In a heavy skillet, heat 2 tablespoons of bacon drippings.
  4. Add finely chopped onion and cook until tender.
  5. Add ground hamburger meat and minced garlic; brown the meat.
  6. Stir in salt and chili powder.
  7. Pour in 1 cup of water from boiled peppers and add minced tomatoes.
  8. Simmer with the lid on until the meat is tender and most of the liquid has evaporated.
  9. Gradually add cornmeal, stirring constantly until the mixture thickens enough to hold its shape.
  10. Mold the mixture and fill the cooked peppers with it.
  11. Arrange remaining mixture around the peppers in the baking dish.
  12. Bake at 450°F until almost dry and bubbly.
