Ingredients

  • 1 (3 1/2 lb.) frozen broiler-fryer
  • 1/4 cup butter or margarine
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons dried whole thyme
  • 1 1/2 teaspoons dried whole rosemary, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 small onion, quartered

Instructions

  1. To thaw, unwrap chicken and place, breast side down, on a microwave roasting rack in a 12 x 8 x 2-inch baking dish. Microwave at Medium-low (30% power) for 10 minutes.
  2. Turn chicken, breast side up; shield wing tips, tail, and ends of legs with foil. Microwave chicken at Medium-low for 10 minutes, or until chicken is soft but still very cold.
  3. Run cold water inside chicken until giblets can be removed; reserve giblets for other uses.
  4. Rinse chicken cavity with cold water until chicken is no longer icy. Pat dry.
