Ingredients

  • 1/4 cup olive oil
  • 1 large eggplant, diced
  • 1 onion, thinly sliced
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tomatoes, diced
  • 1 cup white vinegar
  • 1/2 cup molasses
  • 1/2 cup pineapple juice
  • 1 tablespoon turmeric
  • 1 tablespoon cinnamon
  • 3 to 6 shots hot sauce
  • salt and pepper

Instructions

  1. In a large frying pan, heat olive oil and sauté diced eggplant and thinly sliced onion until cooked through.
  2. Add diced tomatoes, minced garlic, and minced ginger and cook for another 2 to 3 minutes.
  3. Add white vinegar, molasses, pineapple juice, turmeric, cinnamon, hot sauce, salt, and pepper.
  4. Bring to a boil.
  5. Reduce heat and simmer for another 5 minutes.
