Ingredients
- 1/4 cup olive oil ⓘ
- 1 large eggplant, diced ⓘ
- 1 onion, thinly sliced ⓘ
- 1 tablespoon garlic, minced ⓘ
- 1 tablespoon ginger, minced ⓘ
- 2 tomatoes, diced ⓘ
- 1 cup white vinegar ⓘ
- 1/2 cup molasses ⓘ
- 1/2 cup pineapple juice ⓘ
- 1 tablespoon turmeric ⓘ
- 1 tablespoon cinnamon ⓘ
- 3 to 6 shots hot sauce ⓘ
- salt and pepper ⓘ
Instructions
- In a large frying pan, heat olive oil and sauté diced eggplant and thinly sliced onion until cooked through.
- Add diced tomatoes, minced garlic, and minced ginger and cook for another 2 to 3 minutes.
- Add white vinegar, molasses, pineapple juice, turmeric, cinnamon, hot sauce, salt, and pepper.
- Bring to a boil.
- Reduce heat and simmer for another 5 minutes.
