Ingredients

  • 1 lb. pork (chops, sausage or ribs)
  • 28 oz. can tomato puree
  • 28 oz. can ground tomatoes
  • 2 (12 oz.) cans tomato paste
  • 2 Tbsp. olive oil
  • 1 tsp. oregano
  • 1 tsp. sweet basil
  • 1 small onion
  • 1 bay leaf
  • 1 tsp. garlic powder
  • 1 lb. spaghetti
  • Romano cheese to taste

Instructions

  1. In a 3-quart pan, brown the pork very well.
  2. Drain the fat from the pan.
  3. Add olive oil to the pan and brown the garlic and onion.
  4. Let the mixture cool slightly.
  5. Add the tomato puree and ground tomatoes to the pan.
  6. Let the sauce cook for 1 hour.
  7. Add the tomato paste to the sauce.
  8. If the sauce gets too thick, add water as needed.
  9. Simmer uncovered for an additional 2 hours.
  10. Add oregano, sweet basil, garlic powder, and bay leaf to the sauce.
  11. Cover the pan and cook while boiling the spaghetti.
  12. Cook the spaghetti until al dente, then drain and serve on a plate.
  13. Add Romano cheese to taste and pour the sauce over the spaghetti.
