Ingredients

  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 2 c. sugar
  • 1 tsp. baking powder
  • 2 Tbsp. butter
  • 3 c. hot mashed sweet potatoes
  • 1 tsp. baking soda
  • 1 c. buttermilk
  • 3 eggs

Instructions

  1. Combine nutmeg, cinnamon, and sugar.
  2. Mix in baking powder and stir butter into hot mashed sweet potatoes.
  3. Add baking soda and buttermilk. Beat eggs until frothy.
  4. Combine everything and blend until smooth.
  5. Pour into unbaked pie shells.
  6. Bake 10 minutes at 400°F. Reduce heat to 300°F and bake for an additional 45 minutes.
