Ingredients

  • 1 lb. ground beef
  • 3/4 cup chopped onion
  • 1 (16 oz.) can tomatoes, cut up and drained
  • 1 (15 oz.) can kidney beans, undrained
  • 1/2 cup uncooked rice
  • 1/2 cup water
  • 3 Tbsp. chopped green pepper
  • 1 1/2 tsp. chili powder
  • 1/2 tsp. garlic salt
  • 3/4 cup shredded cheese
  • corn chips

Instructions

  1. In a skillet, fry the ground beef and chopped onion until browned.
  2. Drain excess fat from the skillet.
  3. Stir in the tomatoes, kidney beans, rice, water, chopped green pepper, chili powder, and garlic salt.
  4. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, stirring occasionally.
  5. Serve over corn chips and top with shredded cheese.
