Ingredients
- 12 oz. corkscrew pasta ⓘ
- 1 cup mayonnaise ⓘ
- 1/2 cup Italian dressing ⓘ
- 1 (4 oz.) can chopped green chilies, drained ⓘ
- 1 teaspoon chili powder ⓘ
- 1 teaspoon ground cumin ⓘ
- 1 (16 oz.) can red kidney beans, drained ⓘ
- 1 large tomato, chopped ⓘ
- 1 small green pepper, chopped ⓘ
- 1 (8 oz.) can corn, drained ⓘ
- 1/2 cup chopped celery ⓘ
- 2 tablespoons fresh parsley, minced ⓘ
Instructions
- Cook the corkscrew pasta, then drain and rinse with cold water until completely cool.
- In a large salad bowl, blend mayonnaise, Italian dressing, drained green chilies, chili powder, and ground cumin.
- Toss the cooled pasta with the dressing mixture, then add the drained kidney beans, chopped tomato, chopped green pepper, drained corn, chopped celery, and minced parsley.
- Mix everything thoroughly, cover, and chill before serving.
- Garnish with additional parsley if desired.
