Ingredients

  • 12 oz. corkscrew pasta
  • 1 cup mayonnaise
  • 1/2 cup Italian dressing
  • 1 (4 oz.) can chopped green chilies, drained
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 (16 oz.) can red kidney beans, drained
  • 1 large tomato, chopped
  • 1 small green pepper, chopped
  • 1 (8 oz.) can corn, drained
  • 1/2 cup chopped celery
  • 2 tablespoons fresh parsley, minced

Instructions

  1. Cook the corkscrew pasta, then drain and rinse with cold water until completely cool.
  2. In a large salad bowl, blend mayonnaise, Italian dressing, drained green chilies, chili powder, and ground cumin.
  3. Toss the cooled pasta with the dressing mixture, then add the drained kidney beans, chopped tomato, chopped green pepper, drained corn, chopped celery, and minced parsley.
  4. Mix everything thoroughly, cover, and chill before serving.
  5. Garnish with additional parsley if desired.
