Ingredients

  • 4 cups turkey or chicken, cubed
  • 15 oz can black beans, rinsed and drained
  • 1 package corn tortillas
  • 2 cans cream of chicken soup
  • 1 cup skim milk
  • 1/2 cup salsa
  • 1 cup cheddar cheese, grated

Instructions

  1. Spray a 9 by 13 inch dish and place the cubed turkey or chicken and black beans in the bottom.
  2. Cut the corn tortillas into squares and arrange them on top of the meat and beans.
  3. In a pot, combine the cream of chicken soup, skim milk, and salsa, then heat until warmed through.
  4. Pour the soup mixture over the tortillas in the dish.
  5. Bake for 45 minutes.
  6. When done, sprinkle grated cheddar cheese on top and serve.
