Ingredients

  • 1 lb. ground beef
  • 1/4 c. cooking oil
  • 1 small chopped bell pepper
  • 1 small onion, chopped
  • 1 (18 3/4 oz.) can tomatoes
  • 1 c. water
  • 2 tsp. salt
  • 1 Tbsp. chili powder
  • 1/2 c. raw rice
  • 1 (16 oz.) can red kidney beans or Ranch Style beans

Instructions

  1. Saute ground beef in cooking oil with chopped bell pepper and onion.
  2. Drain off excess oil from the meat mixture.
  3. Add canned tomatoes, water, salt, and chili powder to the skillet.
  4. Simmer the mixture for 10 minutes.
  5. Remove from heat and stir in raw rice and beans.
  6. Pour the mixture into a buttered casserole dish.
  7. Cover the casserole and bake at 350°F for 1 hour.
  8. Stir the dish and continue cooking for an additional 30 minutes.
