Ingredients

  • 2 chickens, boiled and boned
  • salt and pepper to taste
  • 1 can cream of chicken soup
  • 1 package corn tortillas, cut into 1/4 pieces
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 can Ro-Tel
  • 1 pound Cheddar cheese

Instructions

  1. Salt and pepper the boiled and boned chicken to taste.
  2. In a casserole dish, layer tortillas, chicken, cream of chicken soup, diced celery, diced onion, Ro-Tel, and shredded Cheddar cheese.
  3. Repeat the layering process until all ingredients are used.
  4. Bake at 375°F until hot throughout and cheese is bubbly, about 45 minutes, or freeze for later use.
