Ingredients

  • 1 lb. lean ground beef
  • 2 Tbsp. vegetable oil
  • 2 onions, finely chopped
  • 1 red pepper, seeded and cut into 2 x 1/2-inch strips
  • 1 clove garlic, crushed
  • 2 Tbsp. all-purpose flour
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1 Tbsp. tomato paste
  • 1 (8 oz.) can tomatoes
  • 1 1/4 c. beef broth
  • salt to taste
  • 1 (17 oz.) can cannellini beans, drained and rinsed

Instructions

  1. Heat the vegetable oil in a large heavy-bottomed skillet. Add the chopped onions, red pepper strips, and crushed garlic if using, and cook gently for 5 minutes until the onion and pepper are soft.
  2. Add the ground beef to the skillet, turn the heat to high, and cook until the meat is evenly browned, stirring with a wooden spoon to break up lumps.
  3. Remove from heat and stir in the flour, chili powder, cumin, and dried oregano.
  4. Add the tomato paste, canned tomatoes with their juice, and beef broth to the skillet.
  5. Return to the heat and bring to a boil, stirring constantly.
  6. Season with salt to taste, but do not add pepper as chili powder provides the necessary spice.
  7. Cover the pan and simmer for approximately 40 minutes.
  8. Stir in the drained and rinsed cannellini beans and simmer for an additional 5 minutes to heat through.
  9. Serve immediately in a warmed dish.
