Ingredients

  • 3 c. graham cracker crumbs
  • 1/2 c. packed brown sugar
  • 2/3 c. butter or margarine, melted
  • 3 (14 oz.) cans sweetened condensed milk
  • 5 egg yolks
  • 2 c. lime juice
  • whipped topping (optional)

Instructions

  1. In a bowl, combine graham cracker crumbs, brown sugar, and melted butter.
  2. Press the mixture onto the bottom and up the sides of 2 greased 9-inch pie plates.
  3. Bake the crusts at 350°F (175°C) for 8-10 minutes, then let cool.
  4. In a large bowl, whisk together sweetened condensed milk and egg yolks until smooth.
  5. Add lime juice and mix well.
  6. Pour the filling into the prepared crusts.
  7. Bake at 350°F (175°C) for 15 minutes or until the filling is set.
  8. Allow the pies to cool completely, then refrigerate for at least 2 hours before serving.
  9. Top with whipped topping, lime slices, and fresh mint if desired.
