Ingredients

  • 3 cups milk
  • 1 cup cornmeal (preferably stone-ground)
  • 1 teaspoon salt
  • 1 teaspoon bacon fat or butter
  • 1 teaspoon sugar
  • 1/3 cup green chiles, chopped
  • 1/2 cup Monterey Jack cheese, grated
  • 3 eggs, separated

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Scald milk in a large saucepan.
  3. When bubbles begin to form around the edge, whisk in the cornmeal, bit by bit.
  4. Stir until mixture thickens, then continue cooking over very low heat for 5 minutes, stirring now and again to prevent sticking.
  5. Add salt, bacon fat or butter, and sugar, and cook for several minutes longer.
  6. Remove from heat and stir in chopped green chiles, grated Monterey Jack cheese, and egg yolks.
  7. Grease a souffle dish with bacon fat or butter and heat it in the oven.
  8. Whip egg whites until stiff but not dry, then fold into the cornmeal mixture.
  9. Pour the mixture into the hot dish and bake for 45 minutes, or until puffed up and beginning to brown on top.
  10. Serve hot with butter.
