Texas Tortilla Soup
A hearty Tex-Mex soup with seasoned ground meat, tomatoes, and a spicy kick, topped with cheese and crunchy chips, perfect for a comforting family meal.
Ingredients
- 1 medium chopped onion ⓘ
- 2 cloves minced garlic ⓘ
- 1 Tbsp. oil ⓘ
- 2 lb. ground meat ⓘ
- 14 1/2 oz. can stewed tomatoes ⓘ
- 1 can Ro-Tel tomatoes ⓘ
- 1 can beef bouillon ⓘ
- 1 can chicken broth ⓘ
- 1 can tomato soup ⓘ
- 2 c. water ⓘ
- 1/2 tsp. ground cumin ⓘ
- 1 tsp. chili powder ⓘ
- 1/2 tsp. seasoned pepper
- 2 tsp. Worcestershire sauce ⓘ
- 1 Tbsp. Tabasco ⓘ
- 1 large bag plain Doritos ⓘ
- 1 1/2 c. grated Cheddar cheese
Instructions
- In a large pot, sauté onion, garlic, and ground meat in oil.
- Add stewed tomatoes, Ro-Tel tomatoes, beef bouillon, chicken broth, tomato soup, water, cumin, chili powder, seasoned pepper, Worcestershire sauce, and Tabasco.
- Simmer the soup for 1 hour.
- Place plain Doritos in the bottom of each bowl, ladle the hot soup over the chips, and top with grated Cheddar cheese.
