Texican Taters combine baked potato shells with seasoned turkey, cheese, and salsa, offering a savory, cheesy, and slightly spicy dish perfect for a comforting family meal or casual gathering.

Ingredients

  • 4 baked potatoes
  • 1 lb ground turkey
  • 3/4 cup chopped onion
  • 1 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 cup chunky salsa
  • 1/2 cup milk
  • 3 tablespoon sour cream
  • 1/4 teaspoon pepper
  • 1/2 cup grated Monterey Jack cheese

Instructions

  1. Saute ground turkey and chopped onion for 5 to 8 minutes.
  2. Stir in 1 teaspoon salt, chili powder, and chunky salsa, then cook for an additional 5 minutes.
  3. Cut the tops off the baked potatoes and carefully remove the pulp, reserving the shells.
  4. Add milk, sour cream, 1/2 teaspoon salt, and pepper to the potato pulp and whip until smooth.
  5. Fold the cooked turkey mixture and half of the grated Monterey Jack cheese into the mashed potato pulp.
  6. Spoon the mixture into the potato shells and top with the remaining cheese.
  7. Bake at 400°F for 15 to 20 minutes until cheese is melted and bubbly.
