- Saute ground turkey and chopped onion for 5 to 8 minutes.
- Stir in 1 teaspoon salt, chili powder, and chunky salsa, then cook for an additional 5 minutes.
- Cut the tops off the baked potatoes and carefully remove the pulp, reserving the shells.
- Add milk, sour cream, 1/2 teaspoon salt, and pepper to the potato pulp and whip until smooth.
- Fold the cooked turkey mixture and half of the grated Monterey Jack cheese into the mashed potato pulp.
- Spoon the mixture into the potato shells and top with the remaining cheese.
- Bake at 400°F for 15 to 20 minutes until cheese is melted and bubbly.
