Ingredients

  • 1 English cucumber
  • 1 1/2 tsp salt
  • 1 Tbsp Thai green curry paste
  • 1/4 cup unsweetened coconut milk
  • 1/3 cup unsweetened coconut milk
  • 4 skinless boneless chicken breast halves
  • 1/4 cup creamy peanut butter
  • 2 tsp soy sauce
  • 1 tsp dark brown sugar
  • 1/8 tsp ground red pepper
  • 1/4 cup rice vinegar
  • 3 Tbsp granulated sugar
  • 2 shallots

Instructions

  1. Thread the chicken strips onto bamboo skewers, four per skewer.
  2. In a bowl, combine Thai green curry paste, coconut milk, soy sauce, brown sugar, and red pepper to make the marinade.
  3. Marinate the chicken skewers in the mixture for at least 30 minutes.
  4. Preheat grill or broiler to medium-high heat.
  5. Grill the skewers for about 7-8 minutes per side, until chicken is cooked through.
  6. While chicken is grilling, prepare the dipping sauce by mixing peanut butter, rice vinegar, granulated sugar, and minced jalapeno until smooth.
  7. Slice cucumber thinly and arrange on a serving platter.
  8. Serve the grilled chicken skewers with sliced cucumber and the peanut dipping sauce.
