Thai Chicken Sate
Tender chicken skewers marinated in rich Thai green curry and peanut flavors, served with fresh cucumber and a tangy dipping sauce, perfect for lively gatherings.
Ingredients
- 1 English cucumber ⓘ
- 1 1/2 tsp salt ⓘ
- 1 Tbsp Thai green curry paste
- 1/4 cup unsweetened coconut milk ⓘ
- 1/3 cup unsweetened coconut milk ⓘ
- 4 skinless boneless chicken breast halves ⓘ
- 1/4 cup creamy peanut butter
- 2 tsp soy sauce
- 1 tsp dark brown sugar ⓘ
- 1/8 tsp ground red pepper ⓘ
- 1/4 cup rice vinegar
- 3 Tbsp granulated sugar ⓘ
- 2 shallots ⓘ
Instructions
- Thread the chicken strips onto bamboo skewers, four per skewer.
- In a bowl, combine Thai green curry paste, coconut milk, soy sauce, brown sugar, and red pepper to make the marinade.
- Marinate the chicken skewers in the mixture for at least 30 minutes.
- Preheat grill or broiler to medium-high heat.
- Grill the skewers for about 7-8 minutes per side, until chicken is cooked through.
- While chicken is grilling, prepare the dipping sauce by mixing peanut butter, rice vinegar, granulated sugar, and minced jalapeno until smooth.
- Slice cucumber thinly and arrange on a serving platter.
- Serve the grilled chicken skewers with sliced cucumber and the peanut dipping sauce.
