Ingredients

  • Broccoli
  • 1 or 2 cans cream of mushroom soup
  • 3 to 4 cups grated cheese
  • 1 to 2 pounds sliced fresh mushrooms
  • Saltine crackers

Instructions

  1. Preheat the oven if baking, or prepare to serve as a hot casserole.
  2. Chop broccoli into bite-sized pieces.
  3. Sauté or steam the broccoli and sliced mushrooms until tender.
  4. In a large mixing bowl, combine the cooked broccoli and mushrooms with the cream of mushroom soup.
  5. Add 3 to 4 cups of grated cheese and mix well.
  6. Crumble saltine crackers and sprinkle over the top of the mixture.
  7. Bake in the oven until bubbly and golden, or serve directly if prepared as a chilled salad.
