A crisp, tangy cabbage salad with fresh vegetables and a sweet-sour vinaigrette, perfect as a side dish or light main for picnics and casual gatherings.

Ingredients

  • 1 medium head cabbage
  • 2 thin carrots, sliced
  • 1 onion, sliced or shredded
  • 1 green pepper, sliced or shredded
  • 4 Tbsp. sugar
  • 3 Tbsp. water
  • 10 Tbsp. vinegar
  • 4 Tbsp. salad oil
  • 2 tsp. salt
  • 2 cucumbers, sliced
  • pepper to taste

Instructions

  1. Put all of the ingredients into a large salad or mixing bowl; toss thoroughly.
  2. Marinate overnight or for several hours in the refrigerator.
  3. For best flavor, make the salad the day before serving and allow it to marinate.
  4. Serve as a main course with sandwiches or as an accompaniment to roast pork or baked ham.
