Ingredients

  • 2 lb. carrots
  • 1 lb. Velveeta cheese
  • 1 medium onion
  • 1 stick butter
  • 1 pkg. Ritz crackers

Instructions

  1. Slice the carrots and boil them until tender, then drain.
  2. Saute the chopped onion in butter until tender.
  3. Combine the cooked carrots, sautéed onion, and sliced Velveeta cheese in a baking dish.
  4. Sprinkle Ritz crackers on top and bake until bubbly and golden.
