Ingredients

  • 1 Tbsp. vegetable oil
  • 1 c. all-purpose flour
  • 1/4 c. milk
  • 2 eggs
  • 2 c. okra, sliced
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  1. Mix all ingredients together into a smooth batter.
  2. Add 2 cups of sliced fried okra to the batter and stir to combine.
  3. Heat vegetable oil in a skillet to 400°F (200°C).
  4. Drop spoonfuls of the batter into the hot oil.
  5. Fry until golden brown, turning once for even cooking.
  6. Remove with a slotted spoon and drain on absorbent paper.
  7. Serve hot.
