Ingredients

  • 1 cup raisins
  • 1 cup maraschino cherries, halved
  • 1 cup pitted dates, chopped
  • 1 cup blanched almonds
  • 2 cups walnut pieces
  • 3/4 cup flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla

Instructions

  1. Lightly grease a 9 x 5 x 3-inch loaf pan.
  2. Line the pan with waxed paper and grease the paper.
  3. Mix raisins, maraschino cherries, dates, almonds, and walnut pieces in a large mixing bowl.
  4. Sift flour, baking soda, baking powder, salt, and sugar over the fruit and nut mixture; toss to coat evenly.
  5. Set aside. Beat eggs until foamy, then add vanilla.
  6. Pour the beaten eggs and vanilla over the fruit mixture and stir just until blended.
  7. Pour the batter into the prepared loaf pan.
  8. Bake at 300°F (150°C) for 1 1/2 hours.
  9. Remove from the oven, let cool slightly, then remove from the pan and cool on a wire rack.
