Ingredients

  • 6 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 cup milk
  • 8 ounces cottage cheese, cut into 1/4-inch cubes
  • 3 ounces cream cheese, cut into 1/4-inch cubes
  • 6 tablespoons margarine, cut into 1/4-inch cubes
  • 1 pound Monterey Jack cheese, cut into 1/4-inch cubes

Instructions

  1. In a large bowl, beat eggs.
  2. Blend in flour and baking powder. Stir in milk.
  3. Beat until smooth.
  4. Stir in cottage cheese, cream cheese, margarine, and Monterey Jack cheese.
  5. Pour all mixture into a greased 12 x 8 x 2-inch baking dish.
  6. Bake at 350°F for 45 minutes or until set and nicely browned.
