Ingredients

  • 9 cups torn mixed greens
  • 2 cups cooked chicken strips
  • 1 1/2 cups grapefruit sections
  • 1 1/2 cups orange sections
  • 1 cup thinly sliced red onion
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 tablespoons water
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Divide the mixed greens evenly among 6 plates.
  2. Arrange the cooked chicken strips, grapefruit sections, orange sections, and red onion slices on top of the greens.
  3. In a small bowl, whisk together olive oil, lime juice, water, Dijon mustard, salt, and pepper to make the dressing.
