Ingredients

  • 1/4 cup oil
  • 1 cup raw shrimp, shelled, deveined and diced
  • 1/2 teaspoon salt
  • 1 cup cooked pork, diced
  • 4 cups cooked rice
  • 1/4 teaspoon black pepper
  • 2 chopped onions
  • 2 eggs, beaten
  • 1 cup cooked chicken, diced
  • 1/4 cup soy sauce

Instructions

  1. Set ingredients (prepared and measured) by stove in order listed.
  2. Set skillet over high heat for 30 seconds.
  3. Swirl in half of the oil.
  4. Add onions; brown lightly.
  5. Add shrimp; stir-fry 3 minutes.
  6. Add salt.
  7. Add eggs; scramble until cooked.
  8. Remove from pan.
  9. Swirl remaining oil in pan, then add chicken.
  10. Stir-fry 2 minutes.
  11. Add rice, soy sauce, and pepper.
  12. Stir and toss until all is heated.
  13. Add eggs and stir.
  14. Add lettuce last, just before serving and serve with soy sauce.
