Instructions
- Set ingredients (prepared and measured) by stove in order listed.
- Set skillet over high heat for 30 seconds.
- Swirl in half of the oil.
- Add onions; brown lightly.
- Add shrimp; stir-fry 3 minutes.
- Add salt.
- Add eggs; scramble until cooked.
- Remove from pan.
- Swirl remaining oil in pan, then add chicken.
- Stir-fry 2 minutes.
- Add rice, soy sauce, and pepper.
- Stir and toss until all is heated.
- Add eggs and stir.
- Add lettuce last, just before serving and serve with soy sauce.
