Ingredients

  • 1/2 cup sliced almonds
  • 3 tablespoons sugar
  • 6 cups romaine lettuce, torn
  • 1 11-ounce can mandarin oranges, drained
  • 1 cup sliced celery
  • 3 green onions, chopped
  • 1/2 cup oil
  • 1/4 cup vinegar
  • 2-3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard

Instructions

  1. In a small saucepan over medium heat, cook and stir almonds and sugar until almonds are coated and lightly browned, about 4 minutes.
  2. Spread the almonds on heavy-duty foil to cool; gently break apart.
  3. In a large salad bowl, combine torn romaine lettuce, drained mandarin oranges, sliced celery, and chopped green onions.
  4. Top the salad with the toasted almonds.
  5. In a jar with a tight-fitting lid, combine oil, vinegar, sugar, salt, dry mustard, and garlic powder; shake well.
  6. Pour the vinaigrette over the salad and toss gently to combine.
