Tipsy Chicken
Ingredients
- 4 chicken breasts, skinned and boned ⓘ
- 1/2 c. flour ⓘ
- 2 Tbsp. dried mint ⓘ
- 2 tsp. salt ⓘ
- 1 tsp. pepper ⓘ
- 4 Tbsp. butter ⓘ
- 1 Tbsp. vegetable oil ⓘ
- 1/3 c. bourbon ⓘ
- 1 c. onions, coarsely chopped ⓘ
- 1 small clove garlic, finely minced ⓘ
- 1 c. chicken stock ⓘ
- 2 Tbsp. lemon juice
- 1/2 c. heavy cream ⓘ
- 1/2 c. chopped walnuts ⓘ
- 1/2 c. chopped fresh mint ⓘ
Instructions
- Split chicken breasts lengthwise and pound thin between two sheets of waxed paper.
- On another sheet of waxed paper, combine flour, dried mint, salt and pepper.
- Lightly dredge the pounded chicken breasts in mixture. Shake off excess flour.
