Tofu Stroganoff
Ingredients
- 1 (10 1/2 oz.) pkg. firm tofu vegetable cooking spray ⓘ
- 2 tsp. olive oil ⓘ
- 2 c. sliced fresh mushrooms ⓘ
- 1/2 c. shredded carrot
- 2 cloves garlic, crushed ⓘ
- 2 Tbsp. all-purpose flour ⓘ
- 1 tsp. chicken flavored bouillon granules ⓘ
- 1/4 tsp. pepper ⓘ
- 3/4 c. skim milk ⓘ
- 3/4 c. plain nonfat yogurt ⓘ
- 3 c. hot cooked spinach ⓘ
- egg noodles, cooked without salt or fat ⓘ
Instructions
- Wrap tofu in several layers of cheesecloth or paper towels. Press lightly to remove excess moisture.
- Remove cheesecloth.
- Cut tofu into 1/2-inch cubes.
- Set aside.
- Coat a large nonstick skillet with cooking spray.
- Add oil.
- Place over medium-high heat until hot.
- Add tofu.
- Saute 4 minutes.
- Remove from skillet and set aside.
