Ingredients

  • 2 strips bacon
  • 1/4 cup chopped green pepper
  • 2 cups stewed tomatoes or 6 medium raw peeled and quartered tomatoes
  • dash of sage
  • 2 cups soft bread crumbs
  • 1/4 cup chopped onion
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup sharp Cheddar cheese

Instructions

  1. Fry bacon until crisp; remove and drain.
  2. Leave 1 tablespoon of bacon grease in the pan.
  3. Saute chopped onion and green pepper in the bacon grease.
  4. Mix stewed tomatoes, green pepper, onion, sage, flour, salt, pepper, bread crumbs, and grated cheddar cheese.
  5. Spoon the mixture into a lightly greased 1½-quart casserole.
  6. Sprinkle bacon crumbs and cheese over the top.
  7. Bake at 350°F for 20 to 30 minutes until heated through and bubbly.
