Ingredients

  • 2 whole medium chicken breasts, skinned, boned and halved lengthwise
  • 1/4 cup chopped onion
  • 2 tablespoons butter or margarine
  • 1 (10 oz.) package frozen cut broccoli, thawed
  • 1 teaspoon lemon juice
  • 1/4 teaspoon dried thyme, crushed
  • 3 medium tomatoes, cut into wedges

Instructions

  1. Sprinkle chicken lightly with a little salt and pepper.
  2. Cut chicken into 1/2-inch wide strips.
  3. In a medium skillet, cook chicken and chopped onion in butter or margarine until chicken is no longer pink.
  4. Stir in thawed broccoli, lemon juice, dried thyme, 3/4 teaspoon salt, and 1/8 teaspoon pepper.
  5. Cover and simmer for 6 minutes.
  6. Add tomato wedges and simmer, covered, for an additional 3 to 4 minutes.
