Ingredients

  • 1 cup raw rice, cooked
  • 2 eggs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, chopped
  • 6 ounces tomato paste
  • 1 can water or bouillon
  • 1/2 teaspoon basil
  • 1/2 teaspoon parsley
  • cooked, diced chicken (optional)

Instructions

  1. Heat oil in a large skillet or wok.
  2. Saute onion, green pepper, and garlic.
  3. Stir in eggs and scramble until eggs are set.
  4. Add cooked rice and diced chicken (if using) to the skillet.
  5. Stir in tomato paste, water or bouillon, basil, and parsley.
  6. Simmer for a few minutes.
  7. Serve hot.
