Instructions

  1. Heat 2 tablespoons of olive oil in a heavy, large saucepan over medium-high heat.
  2. Add the chopped celery, onion, leek, shallot, and garlic. Cook for 7 minutes, stirring occasionally.
  3. Add 1/2 pound of sliced mushrooms and sauté for 5 minutes.
  4. Add the peeled, seeded, and chopped tomatoes, chicken broth, white wine, whipping cream, lemon juice, thyme, bay leaf, and saffron threads.
  5. Bring the mixture to a boil.
  6. Reduce heat and simmer uncovered for 30 minutes, stirring occasionally.
