Ingredients

  • 3/4 cup finely chopped tomatoes
  • 1/4 teaspoon baking soda
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup milk
  • 1 1/2 cups shredded Cheddar cheese
  • 2 eggs
  • 1 teaspoon dry mustard
  • 1 teaspoon cayenne pepper
  • salt

Instructions

  1. Combine chopped tomatoes and baking soda in a bowl.
  2. Melt butter in a saucepan over low heat. Add flour and cook, stirring for 2 to 3 minutes.
  3. Slowly pour in the heated milk, stirring until the mixture is smooth and thick.
  4. Add the tomato mixture, shredded Cheddar cheese, lightly beaten eggs, dry mustard, and cayenne pepper. Stir well.
  5. Season with salt to taste.
  6. Cook over low heat, stirring until the cheese melts and the mixture is smooth.
  7. Serve the tomato rarebit over toast.
