Ingredients

  • 2 Tbsp. olive oil
  • 1 1/2 c. diced zucchini
  • 2 cloves garlic, minced
  • 1/2 c. drained, sliced roasted red pepper
  • 1/8 tsp. red pepper flakes
  • 48 medium shrimp, shelled and deveined
  • 1/2 tsp. dried thyme
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 4 small plum tomatoes, sliced

Instructions

  1. In a large nonstick skillet over medium-high heat, warm half of the olive oil until hot but not smoking.
  2. Add the diced zucchini and minced garlic; sauté until golden, about 4 minutes.
  3. Add the drained, sliced roasted red pepper and red pepper flakes; cook for 1 minute.
  4. Add the remaining olive oil, the shrimp, dried thyme, black pepper, and salt.
  5. Cook the shrimp mixture, stirring occasionally, until the shrimp turn pink and are barely cooked, about 3 to 6 minutes.
  6. Gently stir in the sliced tomatoes and cook until the shrimp are opaque throughout and the tomatoes are heated through, about 2 minutes.
