- In a large nonstick skillet over medium-high heat, warm half of the olive oil until hot but not smoking.
- Add the diced zucchini and minced garlic; sauté until golden, about 4 minutes.
- Add the drained, sliced roasted red pepper and red pepper flakes; cook for 1 minute.
- Add the remaining olive oil, the shrimp, dried thyme, black pepper, and salt.
- Cook the shrimp mixture, stirring occasionally, until the shrimp turn pink and are barely cooked, about 3 to 6 minutes.
- Gently stir in the sliced tomatoes and cook until the shrimp are opaque throughout and the tomatoes are heated through, about 2 minutes.
