Ingredients

  • 6 large, ripe tomato slices (1-inch thick)
  • 1 Tbsp butter or margarine
  • 2 oz Blue cheese
  • 1 Tbsp Parmesan cheese
  • 1 Tbsp dried parsley
  • dry breadcrumbs

Instructions

  1. Place tomato slices on a baking sheet.
  2. In a small bowl, combine butter, Blue cheese, Parmesan cheese, and parsley with a fork until well blended.
  3. Add enough dry breadcrumbs to make a crumbly dough.
  4. Divide the mixture evenly among the tomato slices and press to form a crust on each.
  5. Broil until the topping is brown and bubbly and the tomatoes are heated through.
