Ingredients

  • 8 oz. green beans
  • 4 medium carrots sliced
  • 1/2 small head cauliflower separated into flowerets
  • 1 small onion sliced
  • 2 Tbsp. margarine or butter
  • 2 Tbsp. flour
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1/2 cup whipping cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat a small amount of salted water (1/2 teaspoon salt to 1 cup water).
  2. Add green beans, sliced carrots, cauliflower florets, and sliced onion to the water.
  3. Heat to boiling; reduce heat.
  4. Cover and simmer until vegetables are tender, about 12 to 15 minutes.
  5. Drain vegetables, reserving the cooking liquid.
  6. Place vegetables in an ungreased oblong baking dish.
  7. Heat margarine or butter over low heat until melted.
  8. Blend in flour, salt, and pepper.
  9. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.
  10. Stir in 1 cup of the reserved cooking liquid and the whipping cream.
  11. Heat to boiling, stirring constantly.
  12. Boil and stir for 1 minute; remove from heat.
  13. Pour the sauce over the vegetables.
  14. Sprinkle with grated Parmesan cheese.
  15. Set oven to broil at 550°F (290°C).
  16. Broil until the top is light brown and bubbly, about 3 to 5 minutes.
  17. Serve immediately.
