Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 egg
  • 1 cup mashed banana
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 3 tablespoons vegetable oil
  • 3/4 cup milk
  • 1 cup chopped nuts

Instructions

  1. Mix together dry ingredients: flour, sugar, baking powder, salt.
  2. Combine remaining ingredients: egg, mashed banana, vanilla, vegetable oil, milk.
  3. Stir the wet mixture into the dry ingredients until just combined.
  4. Add chopped nuts and fold gently.
  5. Grease and flour one large or two medium-sized loaf pans.
  6. Fill the prepared pans with the batter.
  7. Bake at 350°F (175°C) for 1 hour, covering with foil if necessary to prevent overbrowning.
  8. Remove foil if used and continue baking until a toothpick inserted in the center comes out clean.
  9. Allow to cool before removing from pans and slicing.
