Ingredients

  • 1 large onion, sliced longways
  • 1 sweet red pepper, chopped in 1-inch pieces
  • 2 cloves garlic, chopped fine
  • 1/2 stick butter
  • 1 cup half and half
  • 3 to 4 Tbsp. fresh basil, finely chopped
  • 1/2 cup water
  • 1 tsp. chicken bouillon
  • salt and pepper to taste
  • 1/2 to 1 cup Parmesan cheese
  • 8 oz. Monterey Jack cheese, cut into cubes

Instructions

  1. Spray a large skillet with cooking spray (Pam).
  2. Stir-fry the sliced onion, chopped red pepper, and chopped garlic over medium-high heat.
  3. Cook for 3 to 5 minutes until vegetables are tender.
  4. Remove vegetables from the skillet and set aside.
