Ingredients

  • 14 1/2 oz. can tomatoes
  • 3/4 cup picante sauce
  • 2 cups chopped onion
  • 1 1/2 cups chopped green pepper
  • 2 cloves garlic
  • 2 teaspoons ground cumin
  • 15 oz. can red kidney beans
  • 6-inch package corn tortillas
  • 8 oz. package shredded Monterey or Jalapeno cheese

Instructions

  1. In a large skillet, cut up tomatoes with juice.
  2. Add picante sauce, chopped onion, chopped green pepper, minced garlic, and ground cumin.
  3. Bring to a boil; then reduce heat and simmer for 10 minutes.
  4. Add red kidney beans (or Great Northern beans as a substitute).
  5. Layer the bean mixture with corn tortillas and shredded cheese in a casserole dish.
  6. Bake until cheese is melted and bubbly.
