Ingredients

  • 2 c. uncooked macaroni
  • 1 Tbsp. margarine
  • 2 Tbsp. brown sugar
  • 1 (12 oz.) can luncheon meat
  • 1 (15 1/2 oz.) can pineapple chunks
  • 2 Tbsp. pineapple juice
  • 1 c. cubed cheese
  • 1/2 c. chopped green pepper
  • 1/2 c. mayonnaise
  • 1 (8 oz.) container sour cream or pineapple yogurt
  • 1/2 tsp. salt

Instructions

  1. Melt margarine with brown sugar in a large skillet.
  2. Add cubed luncheon meat and cook, stirring until golden brown.
  3. Cook the macaroni until al dente, then drain.
  4. In a large bowl, combine cooked meat, cooked macaroni, pineapple chunks, cubed cheese, and chopped green pepper.
  5. In a separate bowl, mix mayonnaise, sour cream (or yogurt), pineapple juice, and salt until well combined.
  6. Pour the dressing over the macaroni mixture and toss to coat evenly.
  7. Chill thoroughly before serving.
  8. Serve on lettuce if desired.
