Trade Wind Salad

Ingredients
- 2 c. uncooked macaroni ⓘ
- 1 Tbsp. margarine ⓘ
- 2 Tbsp. brown sugar ⓘ
- 1 (12 oz.) can luncheon meat ⓘ
- 1 (15 1/2 oz.) can pineapple chunks ⓘ
- 2 Tbsp. pineapple juice ⓘ
- 1 c. cubed cheese ⓘ
- 1/2 c. chopped green pepper ⓘ
- 1/2 c. mayonnaise ⓘ
- 1 (8 oz.) container sour cream or pineapple yogurt ⓘ
- 1/2 tsp. salt ⓘ
Instructions
- Melt margarine with brown sugar in a large skillet.
- Add cubed luncheon meat and cook, stirring until golden brown.
- Cook the macaroni until al dente, then drain.
- In a large bowl, combine cooked meat, cooked macaroni, pineapple chunks, cubed cheese, and chopped green pepper.
- In a separate bowl, mix mayonnaise, sour cream (or yogurt), pineapple juice, and salt until well combined.
- Pour the dressing over the macaroni mixture and toss to coat evenly.
- Chill thoroughly before serving.
- Serve on lettuce if desired.
