Ingredients

  • 12 oz. dry red beans
  • 2 1/2 c. water
  • 1/3 lb. salt pork, diced
  • 2 lb. beef cubes
  • 1 c. chopped onions
  • 1 clove garlic, minced
  • 6 oz. can tomato paste
  • 1 tsp. chili powder
  • 1 tsp. cumin seed
  • 1/2 tsp. crushed dried red pepper
  • 1 bay leaf

Instructions

  1. Wash beans and soak overnight in cold water.
  2. Drain beans, then add 2 1/2 cups water and bring to a boil.
  3. Reduce heat and simmer for 1 hour.
  4. Render salt pork in a skillet until crispy; add beef cubes and brown all over.
  5. Drain excess fat if necessary.
  6. Add salt pork, beef, and remaining ingredients to the beans.
  7. Cover and simmer for 2 hours, adding hot water as needed.
