Ingredients

  • 1 lb. lean ground beef
  • 2 medium chopped onions
  • 1 bay leaf
  • 1 stalk celery, chopped
  • 1 1/2 tsp. ground cumin
  • 2 (16 oz.) cans tomatoes, chopped
  • 2 or 3 pickles jalapeno peppers, chopped
  • water as needed
  • 15 1/2 oz. can red kidney beans (optional)
  • 1 lb. cubed round steak
  • 1 medium green pepper, seeded and chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. oregano
  • 1 (15 oz.) can tomato sauce
  • 1/4 cup chili pepper
  • 1 1/2 tsp. ground red pepper

Instructions

  1. In a large kettle, brown the cubed round steak in oil with 1 medium chopped onion, 1 clove minced garlic, ground cumin, and 1 teaspoon chili powder.
  2. Add 2 cups water to the kettle.
  3. Bring to a boil, then reduce heat and cook down until the liquid is almost gone.
  4. Set the cooked meat mixture aside.
  5. In the same or a separate large pot, sauté 2 medium chopped onions, chopped celery, chopped green pepper, and minced garlic until tender.
  6. Add the cooked meat mixture back into the pot.
  7. Stir in 2 cans (16 oz.) tomatoes, chopped, 1 can (15 oz.) tomato sauce, chili pepper, ground red pepper, oregano, and chopped pickles jalapeno peppers.
  8. Add water as needed to reach desired consistency.
  9. Optional: Stir in red kidney beans.
  10. Simmer the chili for 30-45 minutes, allowing flavors to meld.
