Ingredients

  • 3 to 5 squirrels
  • 3/4 cup lemon juice
  • 1 cup cooking oil
  • 2 1/2 cups bread crumbs
  • 3/4 cup milk
  • 6 oz. can mushrooms
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 to 3 onions, grated
  • 1 1/2 tsp. Worcestershire sauce
  • 1/4 tsp. Tabasco
  • 1/2 cup olive oil or bacon fat

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine lemon juice and cooking oil; rub into all parts of the squirrels.
  3. Mix together bread crumbs, milk, mushrooms, salt, pepper, onions, Worcestershire sauce, and Tabasco to make a moist stuffing.
  4. Fill the squirrels with the stuffing and skewer shut.
  5. Brush the stuffed squirrels with olive oil or bacon fat and sprinkle with paprika.
  6. Arrange in a shallow baking pan and baste as necessary.
  7. Bake for 90 minutes, until tender or well done.
