Tuna Stuffed Tomatoes

Ingredients

  • 4 oz. chunk white tuna, drained
  • 8 oz. kidney beans, drained
  • 8 oz. whole kernel corn, drained
  • 1 cup shredded Cheddar cheese
  • 2/3 cup salad dressing
  • 1/4 cup chopped green onion

Instructions

  1. In a mixing bowl, flake the tuna and combine with drained kidney beans, corn, shredded Cheddar cheese, salad dressing, and chopped green onion.
  2. Cover and chill the mixture for an hour.
  3. Core each tomato and carefully remove part of the center to create a shallow bowl.
  4. Drain the tomatoes upside down on a paper towel.
  5. Cut each tomato into 5 to 6 wedges almost to the bottom, leaving the wedges attached at the bottom.
  6. Gently open each tomato and fill with the tuna mixture.
  7. Serve with crackers, chips, pickles, or lettuce wedges.
