Ingredients

  • 6 large sweet green peppers
  • boiling water
  • 2 cups bread crumbs, moistened
  • 1 onion, minced
  • 1 teaspoon Worcestershire sauce
  • 2 sprigs parsley or chopped celery tops
  • 3 tablespoons butter
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1 clove garlic (optional)
  • 1 cup cooked or canned shrimp

Instructions

  1. Place the green peppers in a saucepan and cover with boiling water.
  2. Let stand for 5 minutes, then drain.
  3. Remove stems and seeds from the peppers.
  4. Trim the bottom of each pepper to allow them to stand upright.
  5. Melt 3 tablespoons of butter in a skillet.
  6. Cook the minced onion, optional garlic, and parsley or chopped celery tops for 1 minute, stirring constantly.
  7. Add the moistened bread crumbs, squeezing out excess moisture.
  8. Heat the mixture well.
  9. Add the cooked or canned shrimp, salt, and Worcestershire sauce.
  10. Remove from heat and stir in the beaten egg.
  11. Fill each pepper with the prepared mixture.
  12. Place the stuffed peppers in a pan containing 1/4-inch boiling water.
  13. Dot the peppers with butter.
  14. Bake at 325°F (160°C) for 20 to 30 minutes, until browned, adding more water if necessary.
