Seafood Chowder Base

Ingredients

  • 6-8 Tbsp. fresh butter
  • 1 heaping Tbsp. fresh garlic
  • 2 c. whole milk
  • 3 large potatoes
  • 1/2 tsp. basil
  • 1/2 tsp. pepper, preferably crushed
  • 1 large onion
  • 2 c. cream
  • 2 c. fish or seafood
  • 1 Tbsp. salt
  • 2 Tbsp. parsley
  • 1/4 tsp. thyme

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; cook until softened, about 5 minutes.
  3. Peel and dice the potatoes; add to the pot and cook for another 5 minutes.
  4. Pour in the whole milk and cream; bring to a gentle simmer.
  5. Add the fish or seafood to the mixture and cook until heated through, about 10 minutes.
  6. Stir in the salt, basil, parsley, thyme, and crushed pepper (or substitute with two Swiss Knorr fish bouillon cubes).
  7. Simmer for an additional 5 minutes to allow flavors to meld.
  8. Serve hot, garnished with extra parsley if desired.
